MOM'S DUTCH BABY GERMAN PANCAKE 
Make 1 hour up to 24 hours before serving.

6 large eggs
1 cup all-purpose flour
2 tbsp. butter, melted
1/2 tsp. salt
1 cup milk
2 tbsp. butter flavored shortening (Crisco)

Add eggs, flour, salt, milk and melted butter to blender. Cover and blend for 30 seconds or until smooth. Stop and scrape sides. Blend again for an additional 30 seconds. Cover batter and let stand up to 3 hours at room temperature or chill overnight.

Preheat oven to 450°F. Using 1 tablespoon of shortening per 9-inch metal pie pan, (can use Pyrex but metal is better).

Place both pie pans in preheated oven for 5 minutes to melt shortening. After 5 minutes quickly remove pans from oven and swirl melted shortening to grease pan. Then divide batter evenly between pans.

Reduce oven temperature to 350°F and bake for 15 minutes or longer until edges are puffy and golden brown. Remove to warm plates.

Serve with butter, lemon wedges and confectioners' sugar.
