CRISP POTATO DOUGH STICKS 
3/4 c. grated, cooked potatoes
1 1/3 c. flour
3/4 c. shortening
Salt & pepper to taste
1 egg, lightly beaten
Coarse salt (opt.)
Caraway seeds (opt.)
Grated cheese (opt.)

Work potatoes, flour, shortening and salt into a smooth dough. Roll out about 1/4" thick. Cut into stick with a pastry wheel. Brush with egg and sprinkle with coarse salt, caraway seed or grated cheese if desired. Bake in a preheated 400 degree oven for about 15 minutes.
