SHRIMP SOUFFLE 
1 lb. shrimp, fresh, canned or frozen
6 slices bread, cubed
3 eggs, well beaten
1 stick butter, melted
1/2 lb. grated Cheddar cheese
1/2 tsp. dry mustard
3/4 tsp. salt
2 c. milk

Layer cubed bread, grated cheese and shrimp in a greased 2 quart casserole. Blend all other ingredients and pour over bread, cheese, and shrimp. Bake in 375 degree oven until silver knife inserted in souffle comes out clean, about 1 hour. Makes 4 servings.

EASY CHEESE SAUCE:

1/2 c. mayonnaise
1/2 c. milk
1/2 c. grated Cheddar or Parmesan cheese

Stir together all ingredients in small saucepan. Heat over medium low heat about 5 minutes. Serve over hot vegetables or fish.
