AMIGO PIE 
Filling:

1 pound ground beef
1 cup chopped onion
2/3 cup chopped tomato
1/2 cup black olive slices
1 tbsp. chili powder
3/4 tsp. salt
1/2 tsp. pepper

Crust:

3/4 cup cornmeal
1/4 cup flour
1/2 tsp. salt
1 cup hot water (not boiling)
2 tbsp. butter, melted
1 1/2 cup shredded cheddar cheese
1/2 cup black olive slices
1/2 tsp. baking powder

Brown meat, drain. Add onion, tomato, olives and seasonings. Cook until onion is tender.

Combine cornmeal, flour, salt and baking powder. Add water and butter; mix until smooth. Stir in 1 cup cheese and olives. Pour cornmeal mixture into greased 9 inch pie plate. Spoon meat mixture into center of cornmeal mixture and press down gently.

Bake at 400°F for 25 minutes. Top with remaining cheese. 6 servings.
