CHEESE STUFFED MEATLOAF 
1/2 lb. grated Mozzarella
2 lbs. lean ground beef
2 eggs
1/2 c. seasoned bread crumbs
1 c. tomato sauce
1/2 tsp. salt
1 tsp. oregano
Fresh ground pepper to taste
2 sm. minced onions
7-8 slices thin boiled ham

Combine beef, eggs, bread crumbs, tomato juice, salt, oregano and pepper. Saute onions in a little vegetable oil until golden brown. Add to meat mixture; mix well.

Turn out on sheet of foil; flatten into oblong loaf about 1-inch thick. Place ham slices on meat mixture; keep about 1 inch from edge. Sprinkle grated cheese on ham. Using foil to help, fold meat mixture jelly roll style over ham and cheese. Close all openings. Turn the loaf from the foil into a baking pan and shape into loaf. Bake at 325 degrees for 1 hour.
