HONEY OATMEAL COOKIES 
1/2 c. butter or shortening
1 1/4 c. sugar
1/3 c. honey
2 eggs
1 tsp. baking soda
1 tsp. salt
1 3/4 c. flour
2 c. quick cooking oats
1 c. flaked coconut

Mix butter, sugar, eggs, honey, soda and salt thoroughly. Stir in remaining ingredients. Shape dough by rounded teaspoons into balls or drop by teaspoonful. Place 2 inches apart on ungreased baking sheet. Flatten with bottom of glass dipped in sugar.

Bake at 375 degrees for 8 to 10 minutes, or until light brown. Immediately remove from sheet. Makes about 5 dozen.
