ITALIAN POTATO SALAD 
8 med. potatoes, peeled, boiled & cubed
2 med. onions, chopped
2 cloves garlic, minced
2 hard cooked eggs, sliced
1 tsp. salt
1/4 tsp. pepper
1/2 c. vegetable oil
1/4 c. vinegar
1/4 c. grated Romano cheese

Place potatoes in a large bowl. Add onions, garlic and eggs. Season with salt, pepper and oregano. Mix lightly. Mix oil and vinegar together and pour over salad. Mix lightly. Sprinkle cheese over all and toss gently. Serves 4.
