MUSHROOM AND CHIVE BISQUE 
2 tbsp. butter
2 tbsp. flour
1/4 tsp. dry mustard
1 tsp. salt
1/4 c. finely chopped chives or onions
2 c. chopped mushrooms
2 c. chicken broth
2 c. half & half
1/4 c. sherry wine

Melt butter. Add mushrooms and saute until soft. Add flour, mustard and salt. Cook 1 minute. Pour in chicken broth and cook until thickened. Add half & half, sherry and chives. Heat thoroughly and let stand until ready to serve.
