KINKKUKOHOKAS (HAM SOUFFLE) 
4 tbsp. butter
6 tbsp. flour
2 1/2 c. milk
1/4 tsp. salt
1/4 tsp. pepper
2/3 c. grated cheese
4 egg yolks
4 egg whites, beaten
2 1/2 c. chopped cooked ham
1 tbsp. chopped parsley
1 tbsp. finely chopped onion

Melt butter and add flour. When blended, add milk and cook until creamy sauce forms. Stir constantly. Add seasonings and cheese and beat well. Add yolks and beat 2 minutes. Add rest of ingredients, mixing lightly. Pour into buttered baking dish and bake in pan of hot water for 50 minutes in moderately slow about 325 degree oven. Cool and serve. Serves 6.
