VEGETABLE JELLO SALAD 
2 (3 oz.) pkgs. lemon Jello
Juice of 1 lemon
Salt and pepper to taste
1/2 c. grated carrots
1/2 c. finely diced cucumber
1/4 c. diced onion
1/2 c. finely diced celery

Prepare the Jello according to package directions, using the lemon juice as part of the liquid. Add the salt and pepper. Chill until it just begins to set, then fold in the vegetables. Place in a mold and chill until completely set.
