7 MINUTE PUMPKIN PIE 
Baked 9 inch pie shell
1 pkg. vanilla pudding mix
1/4 tsp. salt
1/2 c. packed brown sugar
2 tbsp. flour
1 tbsp. pumpkin pie spice
1 (14 oz.) can evaporated milk
1 1/2 c. canned pumpkin
3/4 c. chopped walnuts

In cooker, mix vanilla pudding mix, flour, salt, sugar and spice. Add milk and pumpkin. Cook, stirring to a full boil. Remove from heat; cool about 15 minutes, stirring occasionally. Add walnuts. Pour into pie shell. At serving time spoon on whipped cream.
