ARTICHOKE HORS D'OEUVRES 
1 (14 oz.) can artichoke hearts (not in oil), chopped
1/2 lb. grated Cheddar cheese
1 bunch green onions, chopped
4 eggs, beaten
6 to 8 saltines, crushed
salt and pepper to taste
few drops of Tabasco sauce to taste
2 tbsp. oil or butter

Sauté onions until transparent. Add beaten eggs to other ingredients.

Bake in a greased 7 x 10-inch pan at 350°F for 35 minutes. Let cool before cutting small squares. Reheat on serving pan when ready to use.
