TOMATO GRAVY WITH ROUND STEAK 
2 lb. round steak
1 med. onion, chopped
1 (15 oz.) can tomato sauce
1 (10 oz.) can tomatoes and green chilies
6 c. water
1/4 c. cooking oil
1/2 c. all-purpose flour

Cut round steak into cubes and brown in small amount of oil. Add finely chopped onion and cook until onions are tender. Add tomato sauce, tomatoes and green chilies, and water. In a separate pot over medium heat brown flour and oil to a copper brown color to make roux. Add to the sauce and cook for about 1 hour or until meat is tender. Serve over rice. 8 to 10 servings.
