BACON QUICHE 
Baked 9 inch crust
8 slices bacon, browned, drained, crumbled
1/2 c. sliced onion (may use up to 1 c.)
2 c. (8 oz.) grated Swiss cheese (or 1 c. Swiss and 1 c. Cheddar)
3 beaten eggs
1 1/2 c. milk
1 tbsp. flour
1/2 tsp. salt
Dash nutmeg

Reserve 2 tablespoons bacon drippings. Brown onion until tender and drain. Place all but 2 tablespoons bacon in crust. Top with cheese and onions.

Combine egg and milk with beater. Beat in flour and seasonings. Pour into shell. Sprinkle with remaining bacon. Bake 45 minutes or until nearly set in center at 325 degrees. Cool 10-15 minutes. Serves 4-6.
