VEGETABLE BEEF STEW 
1 lb. or 1/2 lb. beef meat
1 clove garlic, minced
1 lg. onion, chopped
2 carrots, cut in pieces
3 med. potatoes, peeled and chopped
2 cans unsalted tomatoes
5 c. water
1 1/2 tsp. lite salt or less
1/8 tsp. pepper
1/2 tsp. basil leaves

Put all into kettle and bring to boil. Reduce heat to keep volume unchanged. Cover and simmer at least 2 hours. Add water as needed. Makes 12 cups.
