STUFFED JALAPENO PEPPERS 
1/2 c. chopped onion
1/2 c. cracker meal
1 tsp. salt
1 egg
1/4 c. milk
1 can boned chicken
1 can tuna or crab meat
Jalapeno peppers

Seed peppers; wash. Split peppers and stuff with all ingredients. Roll in flour. Dip in batter and deep fry about 3 minutes. Batter: 1/4 cup chicken batter, 1/3 cup hush puppy mix, 1/3 cup cracker meal. Add enough water to mixture to dip peppers.

I have started stuffing jalapeno peppers and freezing them but I really have a hard time getting to stick to the pepper. I use milk and egg/bread crumbs. I have started using chicken breading and tried taking a slice off the back of pepper. Breading stays on kinda but any other ideas would be great!
