COUSCOUS SALAD 
1 tbsp. olive oil
4 tbsp. finely chopped onion
1 tsp. finely chopped garlic
1 tsp. ground cumin
1 c. water
1 c. couscous

Heat oil in a small saucepan. Add onion, garlic and cumin. Cook until veggies are wilted. Add water. Bring to a boil. Add couscous stirring. Cover closely. Remove from heat and let stand 5 minutes. Put in bowl to cool.

DRESSING:

4 tbsp. red wine vinegar
6 tbsp. olive oil
2 tbsp. soy sauce
1/2 tsp. jalapeno pepper, minced
1/4 tsp. Tabasco sauce
1 c. diced celery
1 1/2 c. diced tomatoes
2 tsp. minced garlic
1/2 c. chopped fresh herbs (basil, cilantro, parsley)
2 tbsp. lemon juice
Salt and pepper

Combine dressing ingredients. Toss with couscous.
