LEMON CHEESE CAKE 
1 c. butter
2 c. sugar
3 c. flour
6 egg whites
1 c. milk
3 tsp. baking powder
1 tsp. vanilla

Cream butter and sugar, mix baking powder with flour that has been sifted. Add flour, baking powder and milk to sugar and butter mixture. Fold in stiffly beaten egg whites. Add vanilla. Bake in 3 layer pans - greased and lined with wax paper at 300 degrees for ABOUT 30 minutes.

FILLING:

6 egg yolks
2 sticks butter
2 c. sugar
2 tbsp. flour
1/2 c. lemon juice

Mix flour with sugar. Melt butter, stir in sugar and flour, egg yolks and lemon juice. Mix well and cook over medium heat until thick. Stir almost constantly while cooking to avoid scorching. Cooking time is 5 to 10 minutes. Allow to cool before spreading on cooled cake layers.

This cake is very good like this but the divinity topping makes it special.

DIVINITY TOPPING:

1 1/4 c. sugar
1/4 c. Karo
1/4 c. water
1 egg white
Heaping tbsp. marshmallow creme

Cook sugar, Karo and water until soft ball forms when dropped in cup of cold water. Pour slowly over beaten egg white - beat constantly while pouring. Add marshmallow creme. Beat until thick and not runny. Spread over top of cake.
