CABBAGE POTATO RICE DRESSING 
2 lb. lean ground beef
1 c. rice, raw
2 lg. cans V-8 juice
Red pepper
2 onions, diced
1/2 head cabbage, shredded
2 lb. potatoes, sliced

Mix ground beef with rice, onions, red pepper and 1/2 can of V-8 juice. Add 1/2 shredded cabbage to mixture. In a large pot, put a layer of mixture, then a layer of cabbage, then a layer of potatoes. Repeat with meat mixture, etc. until all ingredients are used. At this time pour V-8 juice on top of all layers. Cover and simmer on medium heat approximately 30 to 45 minutes. Do not stir. Use remaining head of cabbage to make cole slaw and serve with dressing.
