SPINACH NUGGETS 
2 (10 oz.) pkg. frozen chopped spinach
1 tbsp. minced dried onions
2 c. herb-seasoned stuffing croutons
1 c. grated Parmesan cheese
2 beaten eggs
3 tbsp. butter, melted

In saucepan, cook spinach and onion according to spinach package directions. Drain well. In mixing bowl, combine crushed croutons, cheese and spinach. Stir in eggs and melted butter. Shape into 1 inch balls. Place in shallow pan and bake at 375 degrees for 10-15 minutes. (Can also quick freeze them on a cookie sheet, transfer to freezer containers. When ready to serve, bake at 375 degrees for 15-20 minutes.
