SHRIMPS, CASHEW NUTS AND GREEN PEPPER | |
3 tbsp. oil 1 clove garlic, crushed 1/2 lb. med. size shrimp, uncooked 20 cashew nuts 1 lg. green pepper 1 tsp. salt 1 tsp. sugar 1 c. water 1 tbsp. cornstarch 1 scallion, chopped Wash and shell shrimps and slit down the back of each to remove the vein. Sprinkle sugar over drained shrimps and leave aside for 20 minutes or so. This is to render a crunch to the shrimps when cooked. Dice green pepper into 3/4 inch squared. Heat oil and fry crushed garlic until light brown. Toss green pepper, shrimps and cashew nuts in to stir fry quick for about 1 minute. Dissolve cornstarch in water and add to pan. Bring to a boil and serve garnished with scallions. |
