BAKED CHEESE GRITS 
4 c. skim milk
2 c. water
1 1/2 c. quick cooking grits
1 c. non-fat shredded Cheddar cheese (4 oz.)
1/3 c. butter buds (liquid)
3/4 c. egg substitute, slightly beaten
1/2 tsp. salt
1/2 tsp. red pepper

1. Heat oven to 350 degrees. Spray shallow baking dish (2 1/2 quart) or eight 1 1/2 cups individual baking dishes, with vegetable oil.

2. Bring milk and water to boil in a large heavy saucepan. Watch carefully, will boil over. Slowly stir in grits. Stir until boiling, reduce heat to low and cook 4 to 6 minutes, stirring often, until thick.

3. Remove from heat, stir in cheese, then remaining ingredients. Stir until well blended and smooth.

4. Pour into prepared dish or dishes. Bake until puffed and lightly browned. 25 to 35 minutes for individual dishes, 35 to 45 minutes for large baking dish.
