CARROT CAKE 
2 c. raw grated carrots
1 1/2 c. honey
4 eggs
1 1/4 c. oil
3 tsp. cinnamon
2 tsp. baking powder
2 c. flour (1 c. unbleached white & 1 c. whole wheat)
2 tsp. vanilla

ICING:

1 stick butter
1 (8 oz.) cream cheese
Powdered sugar or honey
Lemon peels

Grate carrots. Mix honey, eggs and oil together. Sift flour. Add baking powder and cinnamon. Fold in wet and dry ingredients. Add carrots last. Stir until not lumpy, about 100 times. Pour into greased cake pans, smaller round ones. Bake at 350 degrees for 40 minutes or until tested done.

Mix icing together, creaming all ingredients.
