MASHED SWEET POTATOES 
2 c. sweet potatoes, mashed
2 eggs
1 c. milk
6 tbsp. butter, melted
1 tsp. salt
2 tbsp. butter, melted
8 lg. or 1/2 c. miniature marshmallows

Cook sweet potatoes (with skins) in water until soft. Peel and smash. Add sugar, salt, melted butter, and milk. Beat eggs well and add to mixture. Pour into baking dish and top with marshmallows. Bake at 350 degrees for 45 minutes.
