PINEAPPLE UPSIDE DOWN CAKE 
3 eggs, (separated)
1 c. flour
1 c. sugar
1 tsp. baking powder
3 tbsp. pineapple juice
1 tsp. vanilla

Separate egg yolks. Beat egg whites stiff (set aside). Sift flour and baking powder together. Cream sugar, egg yolks and juice. Add flour and baking powder. Stir in vanilla and egg whites. Pour over pineapple. Bake 45 minutes at 375 degrees until done (stick with toothpick). Place a pan of water in oven under cake while baking.

FROSTING:

1 c. brown sugar
1/2 c. butter
1 c. sliced pineapple
1 sm. jar cherries
1/2 c. pecan halves

Cook in 10 inch iron skillet. Melt butter in skillet, sprinkle brown sugar over butter. Place pineapple slices in skillet (reserve juice) over brown sugar, place cherries around pineapple. Scatter pecan halves on top. Set aside.
