SOLE A L'ORANGE 
1 lb. Fresh Oregon (of course) sole fillets
2 tbsp. orange juice
1 tsp. lemon juice
1 tbsp. melted butter
Ground nutmeg
Snipped parsley or dried parsley flakes
Lemon pepper
Orange slices

Arrange fish filets in glass baking dish. Combine orange juice, lemon juice and melted butter. Pour over fish. Sprinkle nutmeg, parsley and lemon pepper on fish.

Bake at 375 degrees for 15 minutes until fish flakes easily when tested with fork. Garnish with orange slices. Makes 3 to 4 servings.

For Microwave: Cover dish with waxed paper. Cook at medium power, 7 to 10 minutes, or until fish flakes easily when tested with fork. Turn dish once or rearrange fish if filets are thick. Season and garnish as above.

Since microwave ovens vary in power, you may need to adjust your cooking time.
