AUNT HELEN'S APPLE CAKE 
4 eggs
1 c. sugar
2 sticks butter, melted
1 1/2 c. sifted all-purpose flour
1 tsp. baking powder
3 apples
1/4 c. sugar
2 tsp. cinnamon

Preheat oven to 350 degrees. Butter a 10 inch skillet or cake pan, then sprinkle with flour.

Beat the eggs and sugar until thick and pale. Add the melted butter and flour mixed with baking powder; blend well. Pour batter into skillet.

Peel and cut the apples into wedges; dip in sugar mixed with cinnamon. Stick the wedges into the cake batter. Bake about 40 minutes or until toothpick comes out clean.

Run a knife around the edge and invert onto wire rack. Invert again onto a plate. Serve with powdered sugar or whip cream. Serves 10.
