GREEK POTATOES 
Potatoes
Fresh garlic
Olive oil
Salt

Preheat oven to 425 degrees. Peel potatoes and cut into eating size chunks. (However many potatoes you want to eat.) Parboil for 5 minutes. Drain immediately so they don't overcook.

Put potatoes into a pie plate or baking pan. Pyrex works well. Place whole or cut up pieces of fresh garlic all around. Pour a generous amount of olive oil over the whole thing. You can lightly salt the potatoes if you want to. Bake for 45 minutes, turning them every 15 minutes. Potatoes should be golden brown and somewhat crispy, almost as though they've been deep fried but really they are deep baked. An added treat is eating those big pieces of garlic baked in olive oil!
