SEAFOOD HORS D'OEUVRES 
1/2 c. instant minced onion
1/4 c. water
2 (6 oz.) cans crab meat or tuna (7 oz.), drained & flaked
2 eggs, beaten
1/2 c. bread crumbs
2 tbsp. parsley flakes
1 1/2 tsp. dry mustard
1/4 tsp. pepper
Pinch of red pepper (opt.)

Mix onion and water, let it stand 10 minutes to rehydrate. Add crab, eggs and bread crumbs, parsley and pepper to onion and mix well. Shape into 1" balls. Makes 4 dozen.

Heat 2" oil in Dutch oven to 375 degrees. Fry a few balls at a time until golden, 1 minute. Remove and drain on paper toweling. Serve at once or keep warm in single layer in baking pan casserole with foil 250 degrees up to 30 minutes. Garnish with cucumber slices.
