FLOUNDER AU GRATIN 
2 tsp. butter
2 tbsp. flour
1 c. skim milk
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. paprika, optional
1 lb. frozen flounder fillets, thawed enough to separate
2 tbsp. grated Parmesan cheese

In a small saucepan melt butter over low heat. Remove from heat and stir n flour. Whisk in milk 1/2 cup at a time. Return pan to heat and cook, whisking or stirring constantly until thickened and simmering. Remove from heat, stir in salt, pepper and paprika.

Heat oven to 400 degrees. Arrange fillets in baking pan. Spoon sauce evenly over fillets and sprinkle with cheese. Bake 20 minutes until fish is white and opaque.
