ZUCCHINI BEEF PILAF 
3/4 c. uncooked rice
2 tbsp. butter
1 lb. lean ground beef
1 med. onion, chopped
2 c. peeled and chopped tomato
3 or 4 sm. zucchini, sliced
1 tsp. garlic salt
Salt and pepper to taste
1/2 c. grated Cheddar cheese

Melt butter in large, heavy skillet. Stir rice in butter for a minute or two, allowing to simmer but not to brown. Add beef and onion and stir over heat until meat loses color. Add tomatoes and slices of zucchini and seasonings. Cover and simmer until rice is tender, adding more tomato juice if necessary. Stir in cheese just before serving.
