GRIDDLE CAKES 
1 1/2 c. flour, sifted
3 1/2 tsp. baking powder
3/4 tsp. salt
3 tbsp. sugar
1 egg, beaten
1 1/4 c. milk
3 tbsp. shortening, melted

Sift dry ingredients together. Combine egg, shortening, milk. Add to dry ingredients. Stir until smooth. Drop by spoonfuls onto hot griddle. Cook on one side until puffed and full of bubbles. Turn and cook on other side. Makes 10 to 12 cakes.
