CORNMEAL GRIDDLE CAKES 
2 eggs
2 c. buttermilk
1 c. flour
1 c. cornmeal
1 tsp. baking soda
1 1/2 tsp. salt
2 tbsp. butter, melted
1 to 2 tsp. sugar

Mix ingredients. Drop 1 to 2 tablespoons of the mixture on hot griddle or frying pan, turning once when brown. Serve with maple syrup or homemade preserves.
