SOUL POTATO SALAD 
4 c. potatoes, boiled, peeled and diced
3 tsp. salt
1 tsp. sugar
1/2 tsp. black pepper
1/2 tsp. red pepper
1/2 c. salad oil
1 lg. onion, chopped
1/2 c. chopped celery
1/2 c. chopped sweet pickle
4 hard cooked eggs, chopped
1 lg. sweet apple, peeled and coarsely chopped
1/2 c. mayonnaise
1/2 c. sour cream

Boil potatoes in their jackets until done. Peel and dice while hot. Add salt, sugar and peppers and toss with salad oil. Refrigerate overnight. Add remaining ingredients. Chill until ready to serve.
