PORTUGESE SOUP
1 c. oil
1 tsp. salt
1 tsp. pepper
1/2 tsp. garlic salt
1/2 tsp. garlic powder
2 c. chopped onion
2 lbs. smoked sausage, cut into bite sized pieces
2 (15 oz.) cans red kidney beans
2 (15 oz.) cans tomato juice
1 (16 oz.) can tomato paste
5 cans water
2 med. heads green cabbage, chopped (I use one head)
2 lg. potatoes, diced
1 (10 1/2 oz.) can beef bouillon (can use cubes or powder)
1/2 c. vinegar (very important!)

Cover bottom of large pot with oil. Add salt, pepper, garlic salt and garlic powder. Stir in onion and smoked sausage. Saute 5 minutes. Add kidney beans, tomato juice and tomato paste. Fill above cans with water and add. Add cabbage, potatoes, beef bouillon and vinegar. Simmer 3-5 hours, stirring often. Makes about 8 quarts of soup. This freezes well.

My friends love this soup--the vinegar is a key ingredient to compliment the flavor.
