CHEESECAKE MUFFINS 
16 oz. cream cheese
3/4 c. sugar
3 eggs

Mix well cream cheese and sugar with egg yolks. Beat egg whites until very stiff and fold into cheese mixture.

Butter and coat pans with graham cracker crumbs. Fill muffin cups 3/4 full. Bake 15 minutes at 350 degrees; cool. They WILL fall.

Mix: 2 1/2 tbsp. sugar 1 tsp. vanilla

Mix and drop 1 teaspoon in center of each muffin. Bake 5 minutes at 400 degrees.

Cool and top with Comstock cherry OR blueberry pie filling. These freeze well. Serves 18.
