FARFALLE PASTA WITH SHITAKE
MUSHROOMS
 
1/2 c. olive oil
1 oz. garlic
1 oz. basil
6 oz. sun-dried tomatoes
2 c. cream
2 oz. shitake mushrooms, julienne
Salt & white pepper
1 order farfalle pasta
2 oz. whole butter

In a food processor puree the olive oil, garlic, basil and sun-dried tomato. Saute the shitake mushrooms in some whole butter. Add cream and let reduce then add sun-dried tomato mixture. Finish with salt and pepper. Arrange hot pasta in dish and spoon mushrooms and sauce over pasta.

This is the best sauce recipe I've ever made, and it's so simple. It can be made ahead of time and refrigerated or frozen. (I've done both.)
Everyone asks for the recipe! Of course, it's not low cal, but every calorie is worth it! I use fresh basil, and organic sundried tomatoes in olive oil. I drain the oil from the tomatoes, measure it, and add extra olive oil to equal 1/2 cup. I add more garlic, too. This sauce is absolutely delicious. 10 stars!!!!

I agree with Kathie in Maryland. Best pasta sauce I've ever made as well. Easy, quick, delicious. Everyone raves about it. I can't always get shitake mushrooms, so I often purchase ahead, saute in butter and freeze them. I also use fresh basil, tomatoes in olive oil, and lots of garlic. I always use organic ingredients. This is one of my top 5 all time recipes.
