ZUCCHINI - BEEF CASSEROLE 
4 lg. zucchini, about 2 to 2 1/2 lb.
1 lb. hamburger or ground beef (2 c.)
1/2 c. minced onion
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. chili powder
2 c. (1/2 inch) toasted bread cubes
1 c. grated sharp cheddar cheese
2 (8 oz.) cans tomato sauce
1/2 c. water

Wash zucchini and cut off both ends. Dice half of zucchini and slice remaining half. Brown hamburger; add onion, salt, pepper and chili powder. Combine hamburger mixture, toasted bread cubes, diced zucchini, 1/2 cup grated cheese and 1 can tomato sauce. Place in a greased (1 1/2 quart) casserole. Arrange the sliced zucchini over top; sprinkle with remaining 1/2 cup grated cheese. Combine the other can of tomato sauce with water; pour over the casserole. Cover and bake in a moderate oven (350 degrees) for 45 minutes. Uncover and continue baking until zucchini is tender.
