PLAIN SQUASH SOUFFLE 
3 tbsp. bacon drippings or butter
1 tbsp. chopped onion
1 c. milk, heated
1 c. dry bread crumbs
2 c. squash, cooked, mashed & measured
2 eggs

Melt butter or bacon drippings in hot milk, pour over bread crumbs, mix well. Add to already cooked and drained squash. Add seasonings, beat eggs all together and add to mixture. Pour into baking dish. The top may be covered with extra bread crumbs with a few dots of butter on top. Cook in 350 degree oven for 20 to 30 minutes.
