PORCUPINE MEATBALLS 
1 lb. ground beef
1/4 c. long grain rice, uncooked
1 egg, beaten
2 tbsp. minced onion
1/2 tsp. salt
1 (10 3/4 oz.) can tomato soup, undiluted and divided
1 tsp. worcestershire sauce
2 tbsp. oil
1 c. water

Combine beef, rice, egg, onion, salt, 1/4 c. tomato soup and worcestershire sauce; mix thoroughly. Form into meatballs, using about 2 tablespoons mixture in each one. Brown meatballs in hot oil. Add remaining tomato soup and water. Cover and let simmer about 40 minutes or until rice is done.

Yield: About 2 dozen meatballs.
