JEWISH APPLE CAKE | |
6 med. apples, sliced thin 2 tsp. cinnamon 3 tbsp. sugar 3 c. all-purpose flour 2 c. sugar 1 c. oil 4 eggs 1/2 c. orange juice 3 tsp. baking powder 1/2 tsp. salt 2 1/2 tsp. vanilla 1/2 c. walnuts 6 tbsp. honey Grease and flour a tube pan. Pare, core and slice apples. Sprinkle them with cinnamon and sugar mixture. Set aside. In large bowl combine flour, sugar, oil, eggs, orange juice, baking powder, vanilla and salt. Beat to make a smooth batter. Pour half the batter in prepared pan. Arrange half of the apples over the batter and top with walnuts and honey. Cover with remaining batter and apples arranged evenly over the top. Add a few more walnuts and honey. Bake in a 350 degree oven for 1 1/2 hours until cake is golden brown. Serves 15-18. |
