BROCCOLI AND CAULIFLOWER
CASSEROLE
 
1 head broccoli (steamed and drained) cut into florets (or 10 oz. frozen, cooked and drained)
1 head cauliflower (same as above)
1 can cream of mushroom soup
2/3 c. mayonnaise
1 egg
Salt (optional) to taste
1 1/2 c. shredded Swiss cheese
1 sm. can mushroom pieces (drained)
1/2 c. chopped onions
1/4 c. shredded Swiss cheese
1/2 tsp. pepper
1/2 tbsp. butter

Butter 1 1/2 - 2 quart casserole dish. Mix together all other ingredients except vegetables and 1/4 cup Swiss. When smooth, fold in vegetables. Sprinkle 1/4 cup Swiss on top.

TOPPING:

Mix 1/2 cup bread crumbs with 2 tbsp. butter. Sprinkle on casserole top. Season if desired. Bake at 350 degrees for 30-40 minutes or until bubbly on sides.
