CRISP OVEN FRIED CHICKEN 
1 c. crushed saltine
1/4 c. grated Parmesan cheese
1 tbsp. minced fresh parsley
1/2 tsp. salt
1/2 tsp. oregano leaves
1/2 tsp. basil leaves
1/2 tsp. celery salt
1/2 tsp. onion salt
1/4 tsp. paprika
1/4 tsp. pepper
1/2 bay leaf, crushed
Chicken, cut into serving pieces
1/2 c. evaporated milk
1/3 c. cooking oil

Combine saltines, Parmesan cheese, parsley, salt, oregano, basil, celery salt, onion salt, paprika, pepper and bay leaf. Dip chicken pieces in evaporated milk and then coat with crumbs. Bake in 375 degree oven for 30 minutes, skin side up in a 15 1/2" x 10 1/2" x 2 1/2" roasting pan.

Brush with oil, continuing baking for 30 minutes or until chicken is golden brown and tender. Makes 8 servings.
