COTTAGE CHEESE CHEESECAKE 
1 (24 oz.) carton cottage cheese (with blender make a paste)
Scant 1 1/2 c. sugar
2-3 heaping tbsp. flour
4 egg yolks, slightly beaten
1 (12 oz.) can evaporated milk
1 tsp. vanilla
Dash of salt
4 egg whites, stiffly beaten

Mix sugar, flour and cottage cheese paste together. Add egg yolks and stir. Then milk and vanilla and stir. Fold in beaten egg whites. Pour into graham cracker crust. Bake at 350 degrees until done, about 45 minutes.

You can sprinkle cinnamon or nutmeg on top before baking, if you wish. Cake tests done as for pumpkin pie. You can use cherry pie filling on top after baking.

GRAHAM CRACKER CRUST:

1 pkg. graham crackers
1 stick melted butter
2 tbsp. sugar

Mix together and press firm in greased pan. You may use 9x13 inch cake pan or deep dish pie pan.
