BROILED TOMATOES 
10 med. tomatoes
6 tbsp. olive oil
3 green onions, chopped
1 c. seasoned bread crumbs
4 anchovies, mashed
3 cloves garlic, minced
1 tbsp. basil leaves
1 tsp. parsley
Parmesan cheese

Cut off the top third of each tomato and scoop out the pulp inside. Chop pulp and set aside. Brush tomato inside and out with a little of the olive oil. Bake at 350 degrees for 15 minutes in shallow pan. Turn upside down and let drain. In a casserole, combine tomato pulp, green onions, mashed anchovies, basil, parsley, bread crumbs and rest of olive oil. Mix well and bake about 10 minutes. Fill each tomato with filling and sprinkle with Parmesan cheese. Broil away from heat for 4 minutes, or until topping is golden.
