BRAISED RABBIT 
1 c. flour
1 tsp. salt
1/4 tsp. pepper
1 rabbit, dressed & cut for frying
1 egg, well beaten
1 1/2 c. water
1 c. dry bread crumbs
6 tbsp. bacon drippings

Mix salt, pepper and flour to coat pieces of rabbit. Dip pieces in a mixture of egg and 1 tablespoon of water. Coat well with bread crumbs. Brown on all sides in hot bacon grease in skillet. Add 1 cup of water slowly. Cover pan with lid and simmer 1 hour or until tender. This is a Civil War recipe!
