MERLE'S PUMPKIN CAKE 
1 c. unbleached flour
1 c. flour mixture of soy flour, oat flour, wheat flour or any combinations of flours you like
2 tsp. baking powder
2 c. sugar
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. allspice

Mix all of above well.

Add:

1 c. oil
3 eggs (I use 1 egg and 4 egg whites)
1 can pumpkin or fresh pumpkin

Mix all ingredients well. Bake in Bundt pan at 350 degrees for 1 hour or until toothpick comes out clean when tested. Note: You can use 2 cups self-rising flour instead of the flour and baking powder.
