SQUASH AND GREEN CHILIES 
7-8 c. yellow squash
2 tbsp. butter
2 tbsp. flour
1/2 c. milk
Paprika
1 tsp. salt
1/4 tsp. pepper
1 (4 oz.) can green chilies
3 tbsp. minced onion
2 c. Cheddar cheese
6 strips bacon
1 c. buttered bread crumbs

Cook squash 8-10 minutes. Drain and cool. Melt butter in saucepan over low heat. Add flour and milk. Cook until thick. Add salt and pepper. Combine sauce, squash, chilies, onions, 1 cup cheese (grated) and 4 slices bacon (crumbled).

Put in baking dish. Top with bread crumbs. Bake 20 minutes at 375 degrees. Add remaining bacon and 1 cup grated cheese. Bake 5 minutes. This may be baked, ahead and frozen. Serves 8.
