2 c. sugar
1 1/2 tsp. baking soda
3 c. flour
2 tsp. apple pie spice
1 tsp. salt
3 eggs, beaten
1 c. oil
1 tsp. vanilla
3 c. chopped red Delicious apples
1 c. chopped pecans

Sift soda, flour, spices, and salt together and set aside. In a bowl combine chopped apples, oil, and sugar. Let stand about 1 hour, stirring occasionally. Add vanilla and dry ingredients. Add pecans. Stir until moistened, do not beat. Pour into a greased and floured 10 inch bundt pan. Bake in preheated 350 degree oven for 1 hour or until done. Remove cake from oven. Place in a heavy brown bag, close tightly. Let stand until cool.
