WHITE FRUIT CAKE 
1 1/2 c. butter (3 sticks)
2 c. sugar
1/2 tsp. salt
6 eggs
2 tsp. vanilla
1/2 c. bourbon whiskey
4 c. cake flour
1 tsp. baking powder
4 c. pecans, chopped
1 lb. candied cherries, cut in pieces
1 lb. candied pineapple, cut in pieces

Cream together butter, sugar and salt. Add eggs, one at a time and mix. Sift flour, salt, baking powder together. (Save 1/2 cup flour for dredging flour.) Add eggs one at a time and beat. Alternate whiskey and flour, add vanilla. Mix in fruit and nuts. This makes 2 bread loaf pans. Bake 2 to 3 hours at 250 degrees.
